Ingredients
1 lb assorted seafood (clams, mussels, shrimp, squid, fish)
1 onion, finely chopped
1 can of diced tomatoes
2 cloves of garlic, minced
1 green bell pepper, finely chopped
2 cups of fish or shrimp stock
1 tsp dried basil
1 tsp dried oregano
1/4 tsp red pepper flakes
salt and black pepper, to taste
1/4 cup chopped parsley
3 tbsp olive oil
1 crusty bread loaf, sliced
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the onion, green bell pepper, and garlic and sauté for 5-7 minutes until soft and fragrant.
2. Add the canned diced tomatoes, fish or shrimp stock, oregano, basil, and red pepper flakes. Stir everything together and bring to a boil.
3. Reduce the heat to low and let the mixture simmer for 15-20 minutes to allow the flavors to blend.
4. Add the seafood to the pot and mix gently. Cover and simmer for another 10-15 minutes or until the seafood is cooked through.
5. Season with salt and black pepper, to taste. Sprinkle with chopped parsley and serve hot with slices of crusty bread.
