Ingredients
2 lbs. pork belly, skin on
1 tbsp. salt- 1 tbsp. sugar
2 garlic cloves, minced
1 tsp. black pepper
2 tbsp. soy sauce
2 tbsp. rice vinegar
1 tbsp. sesame oil
2- 1 tbsp. sugar
1 tsp. black pepper
3 cloves garlic, minced
1 shallot, minced
2 tbsp. vegetable oil
1/2 cup soy sauce
1/2 cup rice vinegar
1/4 cup brown sugar
2 tbsp. honey
1 tsp. hot sauce (optional)
2 green onions, chopped (optional)
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a small bowl, mix together salt, sugar, black pepper, garlic, and shallot.
3. Rub the mixture all over the pork belly, making sure to get the seasoning into all the nooks and crannies. Place the pork belly on the prepared baking sheet.
4. Roast the pork belly in the oven for about 45 minutes. The skin should be crispy and the meat should be cooked through. Remove from the oven and let rest for 10 minutes.
5. While the pork belly is roasting, make the glaze. In a small saucepan, heat the vegetable oil over medium heat. Add soy sauce, rice vinegar, brown sugar, honey, and hot sauce (if using). Stir until smooth and heated through.
6. After the pork belly has rested, use a sharp knife to slice it into bite-sized pieces. Pour the glaze over the top of the sliced pork belly and toss to coat evenly.
7. Place the pork belly back in the oven and broil for 3-5 minutes until the glaze is bubbly and caramelized.
8. Serve hot, garnished with chopped green onions (if using).
